Spent Grain Recipes
When your wort is bubbling away in your fermenter on its journey to become beer, you'll likely be left with a lot of spent grain from your mash. The leftover grain can be used in a variety of ways.
Cheese Crackers
Ingredients
- 1 cup ground spent grain
- 1 cup flour
- 2 cups sharp cheddar cheese
- 1 tablespoon salted butter
Directions
Combine all ingredients in a food processor or blender. Roll the dough out onto a cookie sheet, using extra flour if necessary, until dough is thin (about 1/3 cm, or 1/8 in). Using a pizza cutter knife, cut the dough into 1" x 1". squares (about 2.5 cm x 2.5 cm). Bake 10 - 12 minutes at 177°C (350°F).
Chocolate Chip Cookies
Ingredients
- 1 1/4 cups brown sugar
- 1/2 cup white sugar
- 1/2 cup unsalted butter
- 2 eggs
- 2 tablespoons milk
- 2 teaspoons vanilla extract
- 1 3/4 cup flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 cups dried spent grain
- 1 1/2 cups semisweet chocolate chips
Directions
Mix the butter, brown sugar, and white sugar in a large bowl until smooth. Beat the eggs in one at a time, then add the milk and vanilla extract. In a separate bowl, combine the flour, baking soda and salt, and stir into the sugar mixture until well blended. Then add the dried spent grains and chocolate chips. Evenly distribute the mixture on an ungreased cookie sheet in two (2) tablespoon measurements. Bake at 190°C (375°F) for 12 - 14 minutes.
Bread
Ingredients
- 3 cups spent grain
- 1.25 cups warm water
- 1/4 cup sugar
- 4 1/2 cups flour
- 1 teaspoon salt
- 1 egg
- 1/4 cups milk
- 1 packet of bakers yeast
Directions
Mix the sugar into a bowl with the warm water, and add yeast to allow it to activate. Wait 30 minutes, then add the salt, egg, spent grain, and milk. Then add flour slowly to the mixture. Knead the dough thoroughly until it has a uniform consistency. Place the dough in a greased bowl and cover it with plastic wrap. allow the dough to rise until it is about twice the original size, and then punch it down.
Split your dough into separate loaves and place on a cookie sheet with a thin layer of flour, allowing the dough to rise again. Then score the loaves with a knife and bake at 190°C (375°F) for 35 - 40 minutes, or until the bread reaches your desired colour.
Dog Treats
Ingredients
- 4 cups of spent grain
- 2 cups of flour
- 1 cup of peanut butter
- 2 eggs
- 1 banana
Directions
*Please note: NEVER use grain that has come in to contact with hops when making dog treats. Hops are poisonous to dogs and can be fatal if consumed in large quantities.
Mix all ingredients in a large bowl, and cut out cookies in your desired shape. Place the cookies on a cookie sheet with baking spray and score the cookies to ensure they can be easily broken upon completion. Bake at 176°C (350°F) for 30 minutes. Reduce oven temperature to 93°C (200°F) and bake for an additional 2-3 hours, or until cookies are completely dry in the centre. Additional baking time as needed depending on the size of your cookies.
